The price of energy has risen sharply in recent years and especially globally in recent months. The extra cost at the end of the month makes it worth looking for ways to reduce energy consumption. To this end, it is vital to be concerned about energy efficiency when planning any installation.

In professional kitchens, energy consumption is high due to the large number of electrical appliances in continuous operation. Ventilation and climatization do not lag behind in consumption either and for this reason at Morgui Clima we always advise you to invest in the energy efficiency of ventilation systems.

 PROJECT DESIGN

One of the basic premises is the design of the ventilation and smoke extraction installation. The calculation of air flow rates, pipe runs, pressure losses or the choice of motors for the installation is the first step to ensure that it meets the needs. A good dimensioning of the installation allows the energy to be used to be optimised to the maximum.

In the same way, a good design of the installation implies including compensation of the extraction of the hood, with the supply of outside air. This is one of the points that most influences energy savings in kitchens, where air-conditioning installations (either in the kitchen itself or in other rooms) and extraction systems coexist.

  

 VARIABLE FREQUENCY DRIVES

Within the regulation, our main ally is the variable frequency drive. This regulates the frequency and voltage of the electrical signal that reaches the motor, to adjust the speed at which it rotates (rpm's) according to the real demand of the application. It is able to reduce the motor's energy consumption by between 40 and 50%.

Intelligent motor control has many operational and environmental advantages. The use of frequency converters improves productivity, increases energy efficiency and at the same time extends the useful life of the equipment. Consequently, the correct management of electricity consumption translates into direct cost savings.

 

 FANS WITH IE2/IE3 MOTORS 


ruck8Motors account for a high percentage of total energy consumption in the European Union. Consequently, the European Commission has for some years now been updating the regulations to promote the use of high-efficiency electric motors, also known as high-efficiency motors. According to IEC standards, there are currently three classes of motors in use:

- IE1: STANDARD efficiency.

- IE2: HIGH efficiency.

- IE3: PREMIUM efficiency.

According to European standards, IE1 motors can no longer be used and IE2 motors must always be equipped with a variable frequency drive.

The way forward is clear: the future lies in fans and ventilation boxes with IE3 motors or higher, with premium efficiency, lower pressure losses, lower temperatures and therefore longer service life and greater economy. This also helps to reduce CO₂ emissions, one of the most important sustainability targets set by the authorities.

 

 LIGHTING LED

LED technology represents a breakthrough in energy efficiency. Today, there is no alternative to this technology, which consumes 2.5 times less than a conventional energy-saving bulb and 8.9 times less than an incandescent bulb. They save a great deal of energy and are the most environmentally friendly option.

For these reasons, Morgui extractor hoods incorporate LED lighting, with IP54/65 protection and which are perfectly integrated into the hood.

We are pleased to present the new image of our extractor hoods. The Morgui brand logo is now much sharper and therefore more visible.

This new graphic identification of the extractor hoods is transversal to all Morgui extractor hood models. We have designed it with a material called MetalFlex and with the colour Black Pearl.

With this new design, you will want to show off even more our extractor hoods, because the new identification brings to the extractor hoods a set of improvements that we highlight below:

  • It is much more visible and recognisable from afar, without taking up a disproportionate surface area like other brands.
  • It is not intrusive and does not degrade the stainless steel.
  • The finish is polished and shiny, giving a more elegant look to the extractor hood.
  • It is resistant and durable.
  • The relief is the minimum necessary to guarantee the contrast and thus ensure that dirt does not accumulate, and cleaning and maintenance is easy.

Usually, we talk about hospitality projects and products for smoke extraction in bars, restaurants and hotels. However, at Morgui Clima we also carry out a lot of work in schools that have a canteen service.

We are now right in the period where these projects start to spring up and are being planned for the school holiday months. During the months of May and June, the number of requests to change the extractor hoods in school kitchens multiplies. And there is also an increase in improvements to ventilation systems in classrooms.

In most cases, schools are fairly simple installations with few special applications. Odours, greasy fumes, heat, humidity and combustion residues are a daily occurrence in professional kitchens. Smoke extraction fans are directly affected by this, as they are exposed to high levels of grease, oil and heat. Ventilation systems must therefore meet very high requirements. 

RUCK smoke extraction fans have been designed precisely to meet these requirements. Furthermore, from the existing and well-known series that allow a maximum operation of up to 120°, the new fans are now available up to 200° in continuous operation and 400°/120 minutes.

In particular, the MPS series is especially suitable for the extraction of air from industrial kitchens with charcoal grills that generate large amounts of soot and grease particles. 

This single inlet centrifugal fan, with jet blades, withstands 200 °C continuous operation and with built-in IE3 motor is fire-resistant to 400 °C/2 h according to UNE - EN 12101-3.

Its design offers easy maintenance and cleaning, as its hinged door with handle allows quick and easy access to the turbine.

 

In addition, the same unit is fully configurable according to the needs of the installation, thanks to its three possible discharge directions: right, left and top.

The IE3 premium efficiency motor and with different power ratings depending on the size, is 230/400 V at 50 Hz and can be regulated by means of a variable frequency drive, achieving optimum performance at all times.

 

Finally, the housing is made of galvanised steel, with 40 mm mineral wool insulation (sandwich type) and incorporates a drain plug for grease drainage.

We have seen our expectations exceeded, with a higher number of visitors than we had imagined.  EXCELLENT RATING OF THE NEW EXTRACTOR HOODS 
At Morgui Clima we are always committed to innovation and our own design and for this reason we try to present new extractor hood models at every edition of the Hostelco trade show. This year has been no exception and we have presented two new models that have had very good reactions from visitors.

-Beret Induction cooker hood: combining the best of two series, Beret and Indok, to achieve an optimum result.

This new model has induction, extraction plenum and luminaires in horizontal position that achieve a better illumination of the whole working area. Its design and construction complies with the UNE 16282 regulation and, therefore, it is accessible and easy to clean.

As a novelty, this extractor hood is manufactured with a different visual appearance: black lacquered stainless steel.

-Tossa semi-domestic extractor hood: the balance between functionality and aesthetics, with double extraction capacity.

Unlike the domestic extractor hoods we find on the market today, the filters are inclined, thus helping the filtration of greases by decantation. The Tossa hood is designed with open sides and a double collector connected to each other, one at the back and the other at the front. This guarantees the sensation of space for cooking and increases its suction capacity.

This shape with open sides and a front overhang is reminiscent of the classic geometry of old extractor hoods or chimneys, giving rise to a new line of design, different from the more usual and always functional rectangular section. This extractor hood profile evokes the models of the extractor hoods of our ancestors, where there is always a recognisable inclination that acts as a funnel and helps the smoke to reach the evacuation area. In this model, inverted filters are incorporated into the inside of the front of the hood, which help to suck in the vapours and fumes that may escape from the filter collector on the wall.

 RUCK CENTRIFUGAL FANS 

This centrifugal fan, with jet blades, incorporates a direct shaft motor. The whole unit is fire resistant 400°C/2h according to UNE - EN 12101-3 standard, and can also be regulated by means of a frequency driver. It is ideal for smoke extraction in professional kitchens, where a large amount of soot and grease particles are generated.

Its design makes it fully configurable according to the needs of the installation and guarantees easy maintenance and cleaning, as its hinged flap with handle allows quick and easy access to the turbine.+

 BUILDING AUTOMATISATION 

Since our foundation, 25 years ago, we have been distributing instrumentation equipment for the control and treatment of air, the automation of installations and the control of rooms. We have an excellent technical and customer service department that advises you and responds to your specific needs.

Produal's range of TRX transmitters are touchscreen climate controllers with many direct control possibilities. In addition, they can incorporate temperature and humidity sensors. There are also simpler models for more domestic applications with easier controls.

Measuring and controlling indoor air quality is now a priority. That is why we offer sensors that can capture the following variables: temperature, humidity, CO₂, VOC, PM10, PM2.5. This range of sensors can be integrated into Produal's Proxima MESH wireless system.

After the pandemic and the cancellation of the 2020 edition, Hostelco returns with a lot of strength and with the hope of being a platform to boost and revive the business. As it could not be otherwise, Morgui Clima will participate in this great event for the sector.

The trade fair will take place at the Fira Barcelona - Gran Via exhibition centre, in Hospitalet de Llobregat, from April 4 to 7. You will find us in Hall 4, stand D851, from 10 am to 7 pm and on the 7th until 6 pm.

Below, we will briefly tell you about the novelties we will present and the products we will have on exhibition. However, to know all the details first hand, the best thing to do is to visit us and chat in person, right?  HOSPITALITY 

If there is something that defines us, it is our capacity for innovation and commitment to our own design. For this reason, once again, we present new designs and new models of extractor hoods. For this edition of Hostelco 2022, we have designed two new hoods:

- Beret Inductor Hood. "Combining the best of two series, Beret and Indok, to seek an optimal result."

It has extraction plenum and luminaires in horizontal position. Its design and construction responds to the UNE 16282 standard. In addition, it is presented with a different visual aspect: lacquered stainless steel.

- Tossa semi-domestic/domestic hood. "The balance between functionality and aesthetics, with double suction capacity."

Unlike the domestic hoods we currently find on the market, the filters are inclined, and it incorporates a grease decanting system. The Tossa hood is designed with open sides and double collector, one at the rear and one at the front. This ensures a sense of space for cooking and compensates for its suction capacity.

At the booth, we will also have samples of LED luminaires, filters and different stainless steel colour finishes for extractor hoods.

 

 COMPLIANCE WITH UNE REGULATIONS 

In Morgui Clima we are always committed to innovation and investment in R+D+i. Our commitment is to be at the forefront with the compliance of all the norms and regulations. Our cutting-edge designs are governed, among other things, by strict compliance with the updates that the different standards may undergo. For this reason, in Morgui Clima we innovate year after year in the design of industrial extractor hoods.

New UNE 16282: "Equipment for commercial kitchens: Components for ventilation of commercial kitchens". Its different sections specify new requirements that set new rules for manufacturers of machinery for commercial kitchens. As far as cooker hoods are concerned, here is a list of the 10 most important technical requirements:

  1. Kitchens with equipment with a rated power of more than 25 kW must incorporate mechanically forced air supply.
  2. The supply air shall be filtered according to IDA2 (F7).
  3. The air supply shall be 90% of the extraction.
  4. The extraction hoods must be installed at least 2 m from the floor.
  5. Special hoods for barbecues, embers, or grills shall be installed 1.2 m above the floor.
  6. Luminaires should always be recessed in the ceiling of the hood and should have a minimum IP54 tightness rating.
  7. All non-horizontal surfaces must be completely vertical.
  8. Extractor hoods with air supply must be internally insulated to avoid condensation due to temperature contrast.
  9. Plenums are prohibited in extractor hoods that are not accessible for complete cleaning.
  10. All extractor hoods should have an identification label specifying the manufacturer, model and the standard they comply with.

 

 INDUSTRIAL VENTILATION

The Kitchen Net Air (KNA) filtration unit and the RUCK fans are examples of the latest innovations we have added to our product portfolio.

On the one hand, the Kitchen Net Air (KNA) filtration unit offers an average filtration efficiency of around 90%, thanks to the combination of a G4 filter and an F7 filter. This equipment incorporates different filtration stages and is installed in the air supply, upstream of the ventilation box.

On the other hand, the RUCK MPS series centrifugal fans, with single inlet, jet blades and motor incorporated directly on the shaft, withstand 200 °C in continuous operation and are fire-resistant to 400º/2 h. They are ideal for fume extraction in professional kitchens, where large quantities of soot and grease particles are generated. Their motor can be regulated by means of a frequency drive, achieving optimum performance at all times.

Both are built in galvanized steel, are install-friendly and have an easy access system to the filters and the turbine respectively. Maintenance and cleaning are essential to extend the useful life of the filters and fans.

We will also have on display the UNIC 400 ventilation box in a transparent format to see its inside and frequency drives. Both products are of vital importance in efficient fume extraction installations.

Most professional kitchens have at least one industrial oven.

Often, due to their dimensions, the ovens are located outside the main cooking area. In these cases, optimal extraction is achieved with the Morgui Horno hood model, designed specifically for the extraction of smoke generated by professional ovens.

The Horno hood is manufactured with the filter collector inverted, that is, located behind the front of the hood, facing the filters towards the oven doors. With this design, the smoke coming out of the ovens when the oven doors are opened is better extracted.
In addition, the Horno hood can be built in 3 heights, incorporating three sizes of filters, depending on the performance of the ovens underneath. Its great versatility makes it adaptable to any type of industrial oven.

In cases where the oven is adjacent to the cooking block, the most efficient design for proper extraction is a compartmentalized hood: with one zone for the smoke collection requirements of the standard cooking elements (fires, griddles, fryers, etc.), and another zone adapted to the suction characteristics required for the ovens.
This type of hood construction, with an oven part, is offered as a special construction in combination with our wall-mounted or central hood models.
